Created by Jo Rushton, this gluten-free Mediterranean tart brings together slow-roasted veg, creamy feta, and fragrant basil pesto in one easy bake. It’s rich in flavour and packed with wholesome ingredients that support everyday wellbeing – without demanding hours in the kitchen.

Ingredients

  • 1 tbsp olive oil
  • 2 red onions, sliced
  • 8 baby plum tomatoes
  • 8 olives, pitted
  • 1 sheet ready-rolled gluten-free puff pastry
  • 3 tbsp basil pesto
  • 100g sheep feta
  • 1 egg, beaten

Method

  1. Preheat the oven to 220°C.
  2. Lightly oil a flat baking tray.
  3. Place the onions and tomatoes on the tray, drizzle with olive oil, and roast for 15–20 minutes. Set aside to cool slightly.
  4. Unroll the puff pastry and place it on a separate baking tray.
  5. Score a 1cm border around the edge of the pastry.
  6. Spread pesto inside the scored lines.
  7. Add the roasted veg, olives, and crumbled feta.
  8. Brush the pastry edge with the beaten egg.
  9. Bake for 12–15 minutes, or until golden and puffed.

Allow to cool slightly before slicing. Serve warm or at room temperature.
